Quick & Easy Italian Sub Salad

Image
Today was one of those days. You know the kind—when every commercial, every scroll, and every errand screams, “You deserve takeout!” It was loud. The food noise was real. And honestly, old me would’ve given in. But not today. Today, I reminded myself of my goals. Not just the physical ones, but the emotional wins too—like showing up for me, choosing to fuel my body, and proving that progress can happen even on the toughest days. So instead of swinging through a drive-thru, I threw together one of my favorite fast meals: a Quick & Easy Italian Sub Salad. It takes less than 10 minutes, tastes like your favorite sub shop, and leaves you feeling proud and full. Quick & Easy Italian Sub Salad Recipe Ingredients: 2 cups chopped romaine lettuce 4–5 slices hard salami, chopped 8–10 slices turkey pepperoni ¼ cup mozzarella pearls ¼ cup sliced banana peppers ½ cup sliced cucumber ¼ cup chopped bell pepper (any color) Optional Add-ins: Drizzle of olive oil & red wine vinegar Das...

The Real Cost of Change (And Staying the Same)

Image
This quote stopped me in my tracks. Let's read it again and really let it sink in!  “If you’re worried about the cost of going for it, you should see the price of staying exactly where you are. Starting this health journey was scary. I had doubts. I worried about the time, the money, and whether I could stick with it. But what scared me more? Feeling stuck in a body and mindset that didn’t feel like me anymore. That’s when I reached out to a nutritionist. I didn’t need a crash diet or a one-size-fits-all plan—I needed someone who could look at me and help me figure out what my body actually needed. Now, she’s so much more than a coach. She’s my accountability partner, my knowledge base, and the space where I can show up honestly and say, “I’m struggling”—without judgment. She helped me build an individual plan that fits my life and has set me up for sustainable success. Was it an investment? Yes. But staying in the same cycle, trying and quitting, doubting myself, starting ov...

Meal Prep Sunday: A Week of Wins Starts in the Kitchen

Image
Sundays have become a game-changer in my health journey—and it’s not because I have hours to cook like I’m on a Food Network show. It’s because I’ve learned that just a little planning sets me up to win all week long. This week’s meal prep lineup is a delicious mix of comfort and convenience: Breakfasts: Homemade Chick-fil-A style breakfast bowls (yes, they’re as good as they sound) Protein French toast made with blended cottage cheese, honey, and cinnamon Lunches: Korean-inspired tuna bowls with rice, kimchi, cucumbers, and a mayo dressing Turkey wraps with a side of broccoli, carrots, and juicy tomatoes It’s not fancy. It’s not perfect. But it is ready to grab when I’m in a rush, tired, or tempted to reach for something that doesn’t align with my goals. Meal prep isn’t about rigid rules—it’s about making your week easier, reducing decision fatigue, and giving yourself one less thing to stress about. And for me, that’s what helps keep the momentum going. When I open my fridge and see ...

Smart Grocery Shopping: Planning Ahead Without the Pressure of Perfection

Image
Let’s talk about grocery shopping—because believe it or not, it’s one of the biggest tools in my healthy journey toolbox. If you’re anything like me, life is busy. Between work, family, school, and volunteering, I don’t always have time to cook elaborate meals or prep like a food blogger. But I’ve learned that a little bit of planning goes a long way—and more importantly, it doesn’t have to be perfect to make a big difference. This week, I did something simple that helped me stay on track: I bought pre-portioned mashed avocado cups. I’m the only one in my house who eats avocado, and I was tired of watching them go bad before I could finish them. These little 100-calorie packs mean no waste, no guesswork, no extra measuring—and that’s a win in my book. Planning meals and snacks ahead of time helps me avoid impulsive choices when I’m tired, stressed, or just plain hungry. I try to make a quick list of what I’ll actually eat (not what I wish I’d eat), check for shortcuts like rotisserie c...

Roadblocks Happen — And That’s OK

Image
Sometimes, no matter how dedicated we are, life throws us a curveball. For me that happened a few weeks ago - a sprained ankle. And to boot (ha) - my first ever.  I was on a roll—getting my steps in, feeling good, seeing progress. Then, bam. One wrong move and suddenly I’m sidelined, unable to keep up my usual activity. It was frustrating. I felt like all my momentum had come to a screeching halt. But here’s what I’ve learned: roadblocks aren’t failures .  They’re just part of life. It’s OK to Pause for Healing (repeat that with me).  Old me would’ve panicked - “I’m going to lose all my progress!” But now, I’m learning to shift my mindset. Healing ISN'T going backward. Rest ISN'T quitting. Progress isn’t always visible, and that’s okay. Sometimes the most important work we can do is listen to our bodies, allow time to recover, and give ourselves permission to pause. Rolling with the Punches This journey isn’t a straight line. There will always be bumps, setbacks...

Hey friend, I’m Ashley. I’m so glad you’re here. If you’re anything like me—a busy mom, juggling work, family, school, volunteering, and somehow trying to find time for yourself—then you know how easy it is to let your own health and wellness take a backseat. Life gets busy, and before you know it, those “I’ll start next week” promises pile up, and so do those extra pounds. For a long time, I believed getting healthy meant being “all in”—perfect diet, perfect workouts, perfect progress. But the truth is, perfection isn’t real life. And honestly? That mindset kept me stuck. That’s why Progress Over Perfect was born. What This Blog Is Really About This isn’t a place for extremes, fads, or unrealistic expectations. This is a space where we celebrate the small wins, share real-life struggles, and focus on progress, not perfection. Whether it’s eating better, moving more, or simply learning to give yourself grace, every step forward counts here. My hope is that this blog becomes a comm...
