Quick & Easy Italian Sub Salad

 


Today was one of those days.

You know the kind—when every commercial, every scroll, and every errand screams, “You deserve takeout!” It was loud. The food noise was real. And honestly, old me would’ve given in. But not today.

Today, I reminded myself of my goals. Not just the physical ones, but the emotional wins too—like showing up for me, choosing to fuel my body, and proving that progress can happen even on the toughest days.

So instead of swinging through a drive-thru, I threw together one of my favorite fast meals: a Quick & Easy Italian Sub Salad. It takes less than 10 minutes, tastes like your favorite sub shop, and leaves you feeling proud and full.




Quick & Easy Italian Sub Salad Recipe

Ingredients:

2 cups chopped romaine lettuce

4–5 slices hard salami, chopped

8–10 slices turkey pepperoni

¼ cup mozzarella pearls

¼ cup sliced banana peppers

½ cup sliced cucumber

¼ cup chopped bell pepper (any color)

Optional Add-ins:

Drizzle of olive oil & red wine vinegar

Dash of salt & pepper

Italian seasoning or oregano for extra flavor


Instructions:

1. In a large bowl, layer your chopped romaine, veggies, meats, and mozzarella pearls.

2. Toss lightly to combine.

3. Drizzle with oil and vinegar, if desired, and season to taste.

4. Serve immediately with a warm whole wheat roll or keep chilled in a container for lunch on-the-go.
